Menu Plan Monday - Week of March 23


This week I picked up some cheap chicken so you will notice that we are chicken heavy this week. That's ok though because we do love our chicken. So, here is what I came up with this week:

  • Sunday: Roast Chicken
  • Monday: Beef Roast in the Slow Cooker
  • Tuesday: Chicken Quesadillas
  • Wednesday: Buttermilk Pancakes
  • Thursday: Chicken Melt Sandwiches
  • Friday: Chicken Salad Wraps
  • Saturday: Leftovers

When I roasted the chicken this time I tried something a little different. Usually I just throw on some rosemary, salt and pepper. This time I had a lemon sitting there begging to be used to I used lemon zest, salt and pepper on the chicken and then squeezed the lemon juice into the pan. I think it turned out wonderfully. You get just a hint of the lemon flavor in the chicken. Yum!

For today's beef roast in the slow cooker I'm sticking with my quick method of throwing in the roast with a large can of tomatoes, peppers and onions and letting it cook on low for 10 hours. By the time we eat the meat is deliciously tender and the tomatoes, peppers and onions make a great topping for the slices of roast.

For the chicken melt sandwiches on Thursday I am going to try to imitate a delicious chicken sandwich I get from a restaurant near work. It's a grilled chicken breast with ham, cheese, lettuce, tomato and honey mustard on a kaiser roll. Last time the honey mustard I tried was all wrong, but I have a new one and I am ready to try again. I love this sandwich so much, I would love to duplicate it.
