Broccoli Cheddar Soup Recipe

This is a very quick and easy recipe for Broccoli Cheddar soup. I love this soup, but don't have a lot of time to spend making it. This is what works for me and I love it.
Broccoli Cheddar Soup Recipe

Ingredients:
  • 2 lbs. Broccoli, steamed
  • 8 oz. Cheddar Cheese, shredded
  • 1 carton Chicken Stock (I use Progresso)

Directions:

  • Once broccoli is steamed, place in food processor with some chicken stock and puree. Add as much chicken stock as necessary to get the broccoli to puree. You may need to puree the broccoli in multiple batches.
  • Place pureed broccoli in a pot and bring to simmer. Add shredded cheddar cheese.

You can serve the soup once the cheese is melted and the soup is nice and hot, but I prefer to cook it a day ahead of time and reheat it the next night. That gives the flavors a chance to mix together. Yummy!

Sometimes I like to top my bowl of broccoli cheddar soup with a little extra shredded cheese and some bacon.
